1) Pretty much everytime I try and load a game the "Building SPU cache" screen shows up and (EG.. for Grand Theft Auto V) it compiles 474320 every load, is there away to bypass this? or is it normal?

2) I get some error codes from games in the log and not sure if that normally happens from pulling the image off of game disk

Don't use SPU Cache. The game isn't supported by SPU Analyser yet and it is generating SPU Cache endlessly.

Errors are mostly normal, the game may try to find files that don't exist on a real PS3 too under the same circumstances (e.g. files used only during development stages, files only available on DLCs, etc). You can check if the file is there on your PS3 installation if you want to make sure, but if you made a proper dump of the game then I wouldn't bother checking
