I will update the OP with this information.
You can't disable logging, but the LLVM log should stop growing in size when the game has started, and rpcs3.log will only grow very slowly.
I hate to go off topic but I'm curious about a few things;
1 - Is the resolution settings the same as selecting a resolution in PS3 settings (as in doesn't affect the game's internal resolution unless it's supported) or is it changing the emulator's internal rendering?
2 - Are there any plans to implement saving states in the near future?
Try using keyboard controls and spam the start/x-buttons after the criware logo. And be absolutely certain you use the same LLE modules as I do, when I first tested it always crashed on the videos before I had this very long list enabled. A quick look at your log reveals that you forgot libfs, and maybe more?
1. Same as PS3, selecting 1080p will make 99 % of all games not start for instance.
2. No, barely anyone is working on rpcs3 at the moment, this is a slow period.
