So after installing the new update, I boot up persona 5 and notice Ryuji's character portrait flickering in and out of existence, before disappearing completely.
Upon stopping emulation I'm greeted with this error: https://i.imgur.com/t62s2AB.png
After a couple moments, with the absence of any user input, another error pops up: https://i.imgur.com/nlpCiaG.png
The first thing I did was remove all caches which failed to fix anything. I then messed with the emulator config, changing settings in the CPU and GPU tab, but the issue still remains.

Your log is empty, you need to run the game then close the emulator

Is there a reason why the game wouldn't be saving the output to that log? Because no matter what, that file stays empty.

No, the log is never deleted, only the compressed copy (RPCS3.log.gz) might be removed. Look for the uncompressed text file, it's usually right under the RPCS3.exe named just 'RPCS3' with a text document icon, or 'RPCS3.log'
I copy from the bot to give you that explanation
Also, this:

1.-Boot the game you want to upload the log for.
2️.-Close RPCS3 after a few seconds or when you reach the menu screen (Don’t reopen the emulator again as this will clear the log).
3.-Upload the log.
