I've tested with a real Guitar just to make sure it works but I'm playing with Keyboard.
Didn't test Drum on a real instrument but if it works through Keyboard then it works on the instrument same way as the Guitar, use MMJoystick and map the buttons accordingly.

I don't have any options, and have tried everything to switch from microphone to guitar/other instrument. The instrument dropdown doesn't exist for me. Any advice?

You need to set up the controller properly, defining Pad Type as Guitar or whatever instrument you want to use.
