So I tried running the game and it seemed to work perfectly fine the first time, the game booted up correctly, I navigated through the menus and didn't have any problem. After that I quited the game, messed a bit with settings and tried again, this time the game seemed to boot but it got stuck in a loading screen of sorts (image attached, if that's of any help) and wouldn't do anything. Now, I did mess with soe settings so I tried to revert everything to the default values but that wouldn't help and after a few failed attempts I decided to completely reinstall the emulator. This time agin the game booted up seemingly fine and with no issues. I then closed the game and without changing any options tried to boot it up just to get stuck on the loading screen again.
So it seems that for whatever reason this game boots up properly the first time but not any time after and I don't understand the reason.

Thank you so much! I'm going to try the solution given there asap.
I actually did manage to sort of play the game by doing a savestate and booting the game up directly with the savestate, which seemed to work okay but for some reson the second time I did a savestate it seemed to lower the resolution of game (I think the emulator just went to it's default resolution instead of the upscaled one I had) and didn't manage to get it to upres again, even though I haven't changed my settings. Any idea on what's happening there?

Never mind that, it was the reescalation messing up the depth of field effect.
