Maybe need a fresh look at the game?
Can confirm -- after trying various combinations over time, this configuration with the most recent update is the one that has allowed for consistent gameplay, even on a slightly weaker computer. If this can be confirmed more officially, I'd consider this a complete effort.
Game is mostly stable on one of the most recent updates to RPCS3, there are still some various texture bugs which occur, but they are not game breaking by no means, just random flickering here and there occasionally. Below is a gameplay video with two matches. Gameplay is very smooth, cut scenes don't have any weird bugs. One thing to note is the ring girls hair does flicker a good bit and glitch, otherwise during gameplay everything is perfect.
If you are upscaling to 1080p through the resolution scale you will need to turn the threshold up to about 80x80 or a little higher, from my testing, any values lower than this can cause texture bugs where clothing on some fighters almost looks like red and green TV static in a way, by turning this up to at least 80x80 or more it gets rid of any of those bugs. Some will still occur randomly with different menus, mainly in career mode, which I have not managed to find a fix for.
I've also played through a whole career mode, the biggest issue I have with it is texture glitches like I mentioned above and the occasional flickering which also occurs in exhibition, it occurs a bit more with created fighters but once you've played a few times and built up the cache the texture bugs go away on your created fighter and they won't flicker as much.
My log will be attached along with 3 screenshots of my CPU, GPU and Advanced settings. These are the only 3 areas I have made any changes, the rest of the tabs like audio, etc are all set to default. My custom config was also built off of the default settings, not global.
I would definitely say the game is in a playable state right now. If you can look past the occasional texture bug or flicker it runs pretty much perfect. You will deal with random crashes here and there, sometimes I have played for 5-6 hours non stop and had no issues, sometimes you can load the game and start a match and it will crash. It doesn't happen all the time or every time you play but there is occasional crashing every so often.

This is a part 2 I guess to my previous message. For anyone having issues with the game still, I give a fairly detailed explanation in my video of what to do for various issues you can encounter with this game and how to fix them. Hopefully this helps!
